Its essential characteristic is an intense fruity flavour with a distinct aroma. There are a lot of factors which influence the quality and taste of olive oil: the different varieties of olive trees, the differences in soil composition where the trees are cultivated. Even the land use surrounding the olive groves can have an influence on the quality and flavour of the olives. Furthermore, regional climate and rainfall levels, during the ripening stage of the olive, both have a major impact. And, of course, let us not forget that quality is strongly influenced by the treatment methods used. Our job is to find where the high quality olive oil is produced, which varies each year based on the all the criteria just described.
